Cocktail Buffets: customers who want to hold a cocktail hors d'oeuvres party but also would like to give their guests the option of more substantial, dinner type fare typically choose one or two main entrees from the Standard or Classic Dinner Menus, for example a balsamic glazed salmon or sliced, roast beef tenderloin with honey hot mustard glaze. Dinners may be served either sit-down or buffet style. Sit down dinners require more servers and may require a wine server.
